For this recipe, you need to make our lectin-free, sugar-free green banana crunchy granola. This recipe is super easy to make, and a double batch will last you weeks.
It can be stored in the freezer and does not need defrosting time. Such a great meal prep item!
This homemade granola is gluten-free, sugar-free, lectin-free and dairy-free. It’s made with a mix of nuts, coconut and just a small amount of dried figs or dates (or sometimes I use unsweetened dried sour cherries), green bananas and hemp seeds. It’s so delicious and so easy to store, and it’s customizable.

Ingredients for four 3/4 cup servings
For this parfait, you can use goat or sheep yogurt or coconut yogurt if you are vegan. Goat and sheep dairy are much easier to digest because they are made with A2 casein milk. Of course, if you eat cow’s milk, you can use your favorite yogurt, such as plain or Greek yogurt.
Whichever you choose, you get a whole yogurt. Skimmed milk products have no quality. The fat will help you stay full and satiated and keep your blood sugar stable.
Do you need:
- 1 cup lectin-free, sugar-free granola (see post for recipe), freezer is best
- 1 cup goat yogurt or coconut yogurt
- 1 cup frozen wild blueberries
- 1 teaspoon raw local honey (or Manuka honey), or use Yacon syrup or allulose syrup for a lower carb version

How to make this healthy yogurt granola parfait
I love using jars because I can make them ahead of time, cover them, and store them in the fridge. They are also easy to put in a lunchbox. But if you are serving them immediately, you can make them in a glass.
I start with a layer of granola, followed by blueberries and yogurt and a drizzle of honey. I repeat until the jar is full, finishing with some granola and blueberries and a drizzle of honey.
This is a summer gift that is so easy to put together and so convenient. Granola will last a few months in the freezer, so you can make a few double batches and have it all summer long.
You can use fresh berries if you want, but frozen fruit will give it that parfait freshness, which is perfect, especially during hot summer days. If you choose fresh berries, keep the parfait in the freezer for 20 minutes to cool it down a lot.
