We are big herb fans here. I love making coleslaw to serve as a salad and it’s pretty versatile because you can of course put it on sandwiches too. It’s the perfect side dish or topper and you can always find a version to complement the other ingredients on your plate.

So here we are! I made a classic winter salad with all the seasonal produce chopped up in a large bowl. It can be your side dish for dinner, a salad to which you can add additional ingredients, or an accompaniment to pulled pork.

I also can’t deal with how beautiful it is. I love jewel tones – and the greens, vibrant magenta and orange make a stunning dish. It’s festive and fun and just feels…chic.

But it’s as easy as can be as long as you don’t mind chopping some veggies.

This is in our wonderful winter salad:

Before Kale. I love making regular kale or savory and slicing it very thin. It’s so crunchy!

A few cups Kale to. Same as above – I slice it super thin. This gives our coleslaw a beautiful emerald hue and also keeps well in the fridge.

pears! Slice them into matchsticks for the best bite.

Sliced ​​thin shallots. You can also use red onions, but I love a shallot because it’s milder and a little sweeter.

shredded carrots. Just grab a bag of these to keep things simple. Simply that way.

pomegranate seeds. You know how much I love these beautiful jewels! Tart and beautiful, they pack a juicy punch.

Pepitas. These give our coleslaw more crispiness and texture.

toasted pecans or walnuts. Both work! I like to chop them so there are chunks of nuts all over the coleslaw.

The whole thing is tossed with my citrus vinaigrette. This adds incredible flavor and goes so well with pears, kale, shallots, and nuts. This is such a delicious combo!

I love coleslaw because you can make it ahead of time. It also usually keeps well overnight in the fridge, so if you have leftovers, save them for the next day. If you’re making this before a party or want to take it somewhere, I suggest combining all the ingredients, but don’t toss with the dressing until you arrive. The coleslaw only needs to rest in the dressing for a few minutes to absorb all the wonderful flavor, so you definitely have time.

  • 1 medium kale, thinly sliced
  • 4 cups Kale or Tuscan Kale, thinly sliced
  • 2 pears, cut into matches
  • 1 large shallot or 1/2 red onion, thinly sliced
  • ¾ Cup shredded carrots
  • ½ Cup pomegranate seeds
  • Cup roasted pepitas
  • Cup toasted walnuts or pecans, chopped
  • kosher salt and pepper

Citrus vinaigrette

  • 2 tablespoon fresh pressed orange juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon freshly grated orange zest
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 Clove of garlic, finely chopped or pressed
  • ¼ teaspoon Salt
  • ¼ teaspoon pepper
  • ½ Cup Extra virgin olive oil
  • In a large bowl, combine cabbage, kale, pears, carrots, and pomegranate. Sprinkle with a pinch of salt and pepper and toss well. Add peppers and nuts. Drizzle with a few tablespoons of dressing and toss. Let the slaw rest for 5 to 10 minutes before serving.

  • You can assemble the ingredients ahead of time if you just want to dress up a few minutes before serving.
