The author Martha Holmberg reveals 100 recipes for making delicious dishes from the simple tomato. She has ideas on how to make the most of this fruit – even if you bought it at the supermarket out of season.

There are recipes for gazpacho, tomato and zucchini gratin, classic panzanella, tomato risotto, and stuffed tomatoes with spiced beef piccadillo. She also reveals which tomatoes work best in which recipes, and provides ideas for topping puff pastry for a quick appetizer or snack.

This fresh tomato tart by Leite’s Culinaria founder David Leite, will soon be included in your regular recipe rotation. It’s best made with seasonal tomatoes, and while it may seem daunting, the recipe is quite simple.
