The recipe for White Chocolate Rocky Road

This recipe is a twist on the traditional Rocky Road, using milk or dark chocolate, and so is this recipe itself easy to customize according to your taste.

It is super easy to prepare, no baking required, and will keep for a few weeks in the refrigerator.

That means it’s not just great for Christmas, Easter And partiesit is also well suited for Give a gift.

Ingredients for White Chocolate Rocky Road

To tackle this rocky road, you need:

  • Marshmallows (I use Pascall’s pink and white marshmallows and recommend using a similarly good quality marshmallow.)
  • lolly snakes (or substitute dried cranberries or other dried fruit)
  • rice bubbles (or alternatively cornflakes or another crunchy muesli)
  • simple biscuits (or spare pretzels)
  • Fruit sparkle lollipops (or alternatively almonds, pistachios or other nuts)
  • White chocolate (For best results, use good quality chocolate.

How to make Rocky Road with white chocolate

You need Maximum 15 minutes to stone this white chocolate.

First prepare a slicing dish (approx. 28 x 18 cm) and line it with baking paper.

Next, halve and chop the marshmallows into small pieces and place in a mixing bowl.

Crush the biscuits and fruit pieces (chop with a rolling pin or with a sharp knife) and add to the mixing bowl.

Place the rice bubbles in the mixing bowl and stir.

Now all we have to do is add the white chocolate!

Melt the chocolate by microwaving for 20 seconds at a time, stirring between batches until chocolate is melted.

Pour the melted chocolate over the ingredients in the bowl and stir until completely coated in chocolate.

Making white chocolate is a rocky road.

Pour the mixture into a mold, spread to the brim and flatten with a metal spoon.

Place in the fridge for at least an hour to set.

When set, cut into squares.
