I like to mix things up with my salads and increase my fiber intake by adding recipes like my Wheatberry Salad with Feta to my rotation. Chewy, crunchy, and delicious, it’s a great way to try new things while consuming nutritious, essential foods.
Ingredients
- wheat berries: As a healthy whole grain, they’re chewy, nutty in flavor and packed with fiber and protein.

- carrots: Balances the chewy wheatberries with a sweet and healthy crunch.
- Red onion: Strong color and strong, somewhat spicy taste.
- Feta: Feta is a bit creamy and crumbly and adds a great, hot, tangy flavor to the salad.
- Mint: Sweet and super versatile, fresh mint pairs beautifully with the sweet and tart flavors in this salad.
- capers: They have a slightly floral and lemony flavor and are usually quite salty as well because they’re pickled.
- Olive oil: Heart-healthy oil for dressing the salad.
- Balsamic vinegar: Together with the olive oil, it gives the salad a strong, sour taste.
How to make Wheat Berry Salad with Feta

Start by preparing your produce (washing and slicing) and cooking your wheatberries according to the package directions.

Then, in a large bowl, add your cooked wheat berries.

Followed by carrots, red onions and peppers.

Next add the capers, mint and feta cheese.

Drizzle in your olive oil.

Then the balsamic vinegar.

Finally season with salt and pepper.

Mix everything together until thoroughly combined and dressing evenly coats everything.
