Hooray for June! The sun is shining and I look forward to summer activities with Grace. I’ve been brainstorming fun recipes for summer produce (my favorite) and working in our garden lately
Since I often reach for fresh chives while cooking scrambled eggs, I’ve also been growing some herbs by the windowsill. I found this narrow planter (affiliate link) that has a water tank underneath. So far so good! Herbs are so thirsty!
This month, seasonal produce options are expanding to include blueberries and fresh fruit like strawberries, rhubarb and cherries. I will make a crisp soon. The only question is which kind – blueberry, mixed berry or strawberry rhubarb? Asparagus and spring peas are coming out of them, so fill them up while you can.

Creamy Avocado Dip

“Another dinner success! It was surprisingly delicious. I honestly thought “eh” and passed on it but then my friends had a fiesta dinner and I was dying for an excuse not to eat their steak or ground beef tacos so I made refried beans for my tacos. . Tonight I made avocado sauce and onion pickles…YUM. And super easy!!” – Erin

Almond Cake with Roasted Strawberries and Rhubarb

“I have made this cake 3 times now. Once with apple, raspberry and rhubarb. Twice with strawberries and rhubarb. It’s very simple. I have all the ingredients in my cupboard and it whips up in minutes so I can throw it together in between preparing the main meal and surprise everyone. A great insight to separate Kate fruit. This means I can keep it for a few days and top it up as I like. The taste is delicate and pleasant. I have shared with many of my friends.” – Molly
