I should probably add that here in our family, we make a version of a watermelon and feta salad at least once a week during the summer. It’s my husband’s favorite summer salad and when we lived in Barcelona he was always ready to lug a heavy watermelon the mile walk home to our apartment, cut it into small chunks, toss it with the mint and feta and then usually wipe off half the bowl before dinner, lol. Needless to say, we’re big fans of watermelon salads here in the summer, and the classic combination of feta, mint, and cucumber (I love the extra crunch) always hits the spot.
For variety, I’ve occasionally started tossing the feta in the food processor with some Greek yogurt over the last few years to create a bed of silky smooth, creamy whipped cheese to base the salad on. And it turned out to be such a fun way to mix things up, especially for entertainment! Enjoy the salad with a fork or serve with toothpicks for dipping – your choice. And if you want to add some arugula, avocado, pistachios, or a dash of balsamic glaze, the sky’s the limit with the fun customizations here.

Here are a few quick notes on the ingredients you’ll need for this watermelon salad recipe:
- Seedless watermelon: Fresh and juicy watermelon is the star of the salad, so choose one that’s good and ripe! When selecting a fresh watermelon, look for a firm and evenly colored exterior, a hollow sound when tapped, and a heavy weight that indicates juiciness and ripeness.
- cucumbers: Cucumber adds so much freshness and crunch to this salad. We used Persian cucumbers here, but English cucumbers would also work well.
- Red onion: I recommend slicing the red onions very thinly with a knife or mandolin, or you can finely dice and sprinkle on top if you like. If you want to minimize the “bite” of raw onions, simply rinse the onions briefly in cold water before adding them to the salad.
- Fresh mint: The more the merrier when it comes to fresh mint! We love shredding up a generous handful and adding to the salad.
- Lemon: A squeeze of fresh lemon juice also helps liven up the salad and balance out all the sweet flavors.
- Whipped Feta: Easy Whipped Feta is easy to make in a food processor or blender with flavorful feta cheese, plain Greek yogurt, and a drizzle of olive oil.
- Salt and pepper: And don’t forget to season the salad with salt and pepper to bring out all those flavors!

Ingredients for Watermelon Salad:
- 5 To 6 cups diced seedless watermelon
- 3 Persian cucumbers, sliced
- Quarter of a small red onion, very thinly sliced
- juice from 1 lemon (approx 2 tablespoons)
- fine sea salt and freshly ground black pepper
- 2 To 3 tablespoons finely chopped fresh mint leaves
Ingredients for Whipped Feta:
- 8 ounces feta cheese
- ½ cup plain Greek yogurt
- 2 tablespoons olive oil
- Whip up the feta. Place the feta, Greek yogurt, and olive oil in a food processor. Blend for 2 to 3 minutes, pausing occasionally to scrape the sides of the bowl if necessary, until the feta is silky smooth.
- Mix in the watermelon salad. Place the watermelon, cucumber, and red onion in a large mixing bowl. Drizzle evenly with lemon juice, a pinch of salt and pepper and mix very briefly.
