These watermelon popsicles are the perfect treat for a hot summer day. Ice-cold, fruity and refreshing, they cool you down and quench your thirst all at once. They’re also healthy (!) and super easy to make (!) because this watermelon popsicle recipe requires two simple ingredients: watermelon and lime juice. That’s right! There is no added sugar, no added coloring, no additives anything Here. Only fresh fruit!

How to make watermelon popsicles

This Watermelon Popsicles recipe couldn’t be easier to make! You need two simple ingredients:

  • Fresh watermelon – I require 6 cups diced, from about 1 medium melon. Not sure how to shred it? Check out my guide to slicing a watermelon!
  • lime juice – Its light flavor gives these popsicles a great kick! For the best flavor, use freshly squeezed lime juice. Fresh lemon juice works too.

FAQ: How to choose a good watermelon?

  • Look for a melon that is heavy for its size.
  • Look at the “Field Square”. This white or yellow spot is where the watermelon touched the ground while it was growing. A darker spot indicates a more ripe melon. Choose a melon whose spot is yellow or off-white, not pale white.
  • Knock on it! A ripe melon makes a hollow sound.

Place the watermelon and lime juice in a blender and blend until smooth.

Pour the watermelon mixture into popsicle molds, leaving 1/2 inch space on top to expand. Cover and add popsicles if they aren’t built into your molds.

Finally, freeze the popsicles until set, which is 4 hours or overnight.

  • Use a combination of fruits. Part watermelon and part strawberries would be great.

  • Make them creamy. Mix some whole milk Greek yoghurt or coconut milk into the watermelon puree.

  • Use a seedless watermelon. This way you can put the watermelon straight into the blender after chopping it up. If your watermelon has pits, try removing them from the melon before pureeing – they add bitterness to the watermelon mixture.
  • Leave room for the popsicle to expand. The liquid expands in the freezer. Be careful not to fill the popsicle molds to the brim. I leave a half inch at the top to give the watermelon popsicles room to grow.
  • Eat them within 3 months. If your family is anything like ours, these watermelon popsicles will be gone in a flash. But if you do have some leftovers, they’ll keep in the freezer for weeks. Try to consume them within 3 months for the best taste.
