ingredients

For the salad dressing

  • 3 tablespoons olive oil

  • 2 teaspoons of honey

  • juice of 1/2 lime

  • salt, to taste

For the salad

  • 1 cup watermelon, cut into bite-sized cubes

  • 4 cups arugula

  • 1/2 cup feta cheese

  • Bread of your choice (see above)

instructions

  1. Whisk together the ingredients for the dressing until emulsified and thick.
  2. Mix salad ingredients with dressing.
  3. Serve on bread of your choice.
