One of the best things, whether you’re feeding a crowd or filling your tummy, is a big bowl of salad with all the trimmings. It’s no secret that I LOVE big bowls of veggies. That’s why I love coming up with new flavors for salad combinations. One of my new favorites is Waldorf Chicken Salad. It’s not quite traditional because I have my own macro-friendly twist, but it’s SO GOOD!

What you need to make a Waldorf Chicken Salad:
- Sliced or chopped chicken breast
- Big apple, diced
- Celery sticks, chopped
- Red onion, diced small
- Fresh parsley, chopped
- Roasted pecans, chopped
Ingredients for the dressing:
- Fat-free Greek yogurt or dairy-free sour cream/yogurt
- Light mayonnaise
- Clear balsamic vinegar or apple cider vinegar – I love the lemon infused with Baker and Olive
- Freshly squeezed lemon
- poppy seeds (optional)
- Kosher salt
- Black pepper
How to Prepare a Waldorf Chicken Salad:
This Waldorf Chicken Salad is so easy! First, let’s talk about the chicken. You can use any cooked chicken breast. In a pinch, I like to use the Costco Grilled Breasts packet. You only have to take a minute to pluck it through and have it nicely shredded or chopped to your liking!
Once you have your chicken ready, toss together a diced large apple, chopped celery sticks, diced red onions, chopped fresh parsley, and tossed roasted pecans in a large bowl. If you’re wondering where the grapes are, I left them out because I wanted this salad to be great for meal prep. I don’t like grapes to sit and get too soft so I took them out. But don’t hesitate to add anything! By swapping some apples for some apples, the macros remain essentially the same.

Next it’s time to prepare the dressing. Mix together non-fat Greek yogurt (or non-dairy sour cream/yogurt), light mayonnaise, clear balsamic vinegar or apple cider vinegar, freshly squeezed lemon, kosher salt, and black pepper. I also like to add poppy seeds, but that’s totally optional if poppy seeds aren’t your thing.
Additionally, if you want your flavors to really shine, you need to try Baker and Olive’s fortified vinegars. I talk a lot about Baker and Olive, but that’s because they’re my family’s favorite foods! The peach and lemon are the absolute BEST! They are so fresh and take every dish to the next level. I used the Lemon Infused Vinegar for this recipe and it’s so good!
Once your dressing is ready, pour it over your salad ingredients. Mix well! You can enjoy your Waldorf Chicken Salad right away or keep it in the fridge for your week’s meal prep.
Is This Waldorf Chicken Salad Recipe Gluten and Dairy Free?
This Waldorf Chicken Salad recipe is naturally gluten-free. However, make sure you use the non-dairy sour cream or yogurt option to meet dairy needs. The macro difference is almost negligible when using non-fat Greek yogurt or my favorite Forager non-dairy sour cream.
Serving suggestions:
We love this Waldorf Chicken Salad with crackers, on rice cakes, in lettuce wraps, or tossed in a bowl with finely chopped kale for a large green salad! Just sprinkle a little olive oil or extra lemon or good vinegar on top and toss well!
