Banh khot is very similar to banh xeo (Vietnamese sizzling crepes). Both are wrapped in leafy greens and dipped in a sweet chilli sauce. However, banh khot is much smaller and thicker than banh xeo. If I have to choose between the two, it’s Banh Khot. Who doesn’t love food in bite-sized form? Plus, it’s easier with fewer ingredients and harder to mess up.
In the following recipe, I show you how to make banh khot completely from scratch.
For the dough you need rice flour, cornstarch, turmeric, water and coconut milk.
What is Banh Khot?
Banh khot, or Vietnamese savory mini pancakes, are made with a batter of rice flour, cornstarch, turmeric powder, water, and coconut milk.
They are usually topped with shrimp, brushed with shallot oil and sprinkled with chopped, dried, salted shrimp. It’s fried on a cast-iron banh khot or aebleskiver pan to get crispy on the outside and still fluffy on the inside.
These savory mini pancakes are served with a platter of fresh leafy greens and a small bowl of hot and sweet dipping sauce.

Banh Khot Flour Premix
There are small variations in the dough depending on who you ask. You can save yourself some time and guesswork by purchasing the banh khot flour mix. They’re sold in many Asian supermarkets along with all the other little bags of flour mixes. These are convenient options on lazy days.
Other required items: shrimp, dip, batter, fresh veggies, the right pan, scallions, and batter.
Banh Khot/Aebleskiver pan
i won’t lie It was hard to get my hands on an authentic Banh Khot/Aebleskiver pan. You can easily get them in Vietnam and I really wish I had when I visited.
I couldn’t find the pan in my regular Vietnamese grocery store either (check this out!). I finally found it at a Korean grocery store, KP International Market to be exact. It came with the lid which is a must!
To get it online, the closest I can find that is of the same quality is this one. Unfortunately without a lid. boo If you get this pan through Amazon, just use the lid you currently have. It doesn’t have to be a perfect fit.

How to eat banh khot
Eating banh khot requires assembly, making it a fun social experience often shared with families and friends. To eat banh khot, stack an assortment of leafy greens and herbs in the palm of your hand, place a deep-fried banh khot in the center, and roll up. Dip the rolled banh khot in the dipping sauce.
In contrast, banh khot can be one of those foods that keeps you from having conversations and socializing. You can either wrap it, dip it, or chew it, making it the perfect meal for the antisocial or big introvert.
In Vietnam, you’ll find banh khot sold in fancy restaurants or right on the street on trolleys. I prefer the latter, where you sit on tiny plastic stools and eat off flimsy tables while hearing the sound of motorbikes just an inch away, threatening to take your life in an instant. Now, the it’s a good time my friends.

Banh Khot is the bite sized and simpler version of Banh Xeo. Both are wrapped in leafy greens and dipped in a sweet chilli sauce. Crispy on the outside and fluffy on the inside, this is a delicious appetizer that’s not only fun, but fun to say.

- Whisk together all the dough ingredients. Set aside for at least 20 minutes to “bloom,” but the longer the better.
- Marinate the shrimp in a small bowl with salt and pepper. Put aside. If using dried salted shrimp, soak them in hot water for 5 minutes, then rinse and drain. Dry toast in a skillet until fragrant, then finely chop in a food processor or by hand. Put aside.
- Heat the banh khot or aebleskiver medium-high pan. Put a little oil in each indentation. Fill with batter to the brim. It’s also okay to overflow the fountain so it squirts out. This creates extra crispy edges. Sprinkle scallions and dried shrimp if using. Cover with a lid and cook over medium-high heat for about 6-8 minutes. Low and slow is key.
- Remove the lid. Add shrimp and top each with more spring onions. Drizzle more oil onto the scallions (this will make “onion oil”) and around each edge to crisp up the edges. Cover and cook until the shrimp are tender (about a minute). Remove lid and cook for a further 2 minutes until desired crispiness.
- Use a sharp metal spoon to remove the banh khot. Scratch the outside edges first. It should come off easily and scoop out. Serve with your favorite leafy greens and sweet chili sauce.
Remarks
To make it crispy, don’t be shy about the oil. Most of it is reused since the oil is not absorbed as much by the pancake.
