RECIPE: Poblano Breakfast Scramble with perfect scrambled eggs

Top up your scrambled eggs with potatoes and poblano peppers

Ingredients

  • 2 tablespoon olive oil divided
  • 2 Middle red potatoes diced into 1/4″ pieces
  • 1 small Poblano pepper cored and chopped
  • 8th eggs
  • 1 tablespoon chopped onion
  • 1 tsp garlic powder
  • 1 Cup grated cheddar cheese
  • coriander optional set

instructions

  • Heat 1 tbsp olive oil in a large pan. Add the diced potatoes and sauté for 5 to 6 minutes, stirring frequently. Add the chopped poblano pepper and sauté with the potatoes for an additional 3 to 4 minutes or until tender. Set potatoes and peppers aside on a plate.

  • In a medium-sized mixing bowl, crack the eggs and whisk well. Add the chopped onion and garlic powder and toss again.

  • In the same pan, add the remaining olive oil and spread in the pan. Set the heat to medium. Pour in the egg mixture. Let the eggs sit for a minute or two, then squeeze and stir the eggs to cook all of the eggs through. Once cooked through, add the potatoes and peppers back in and stir.

  • Scatter the grated cheese on top and serve immediately.
