Ingredients

  • 15 Roma tomatoes
  • 2 Garlic cloves
  • 1/2 paprika
  • 1/2 Zucchini, sliced
  • 1 tsp oregano
  • 1 tsp Italian spice
  • 1 tablespoon Extra virgin olive oil
  • 1 tablespoon coconut oil
  • 1 tsp salt and pepper

instructions

  • Sauté tomatoes in a large saucepan.

  • Once soft, place the tomatoes in the food processor and add the zucchini, peppers, garlic, spices, and oils.

  • Puree and store as desired. I don’t like canned food (yet!) and wish I was! I will save this sauce and use it on spaghetti, pizza, lasagna or any other Italian dish!
