Recipe: Spinach Lasagna Pan
All the delicious lasagna flavors in a quick weeknight stir-fry version – made with Amazon Fresh ingredients!
Ingredients
- 1 Lb. ground beef
- 1 tablespoon chopped onion or 1/2 cup chopped onion
- 1 tsp garlic powder
- 8th oz. fresh spinach
- 15 oz. can diced tomatoes
- 15 oz. can tomato sauce
- 1 tablespoon Italian spice
- salt and pepper
- 2 cups chicken soup
- 8th Lasagna Noodles Broken
- 1 Cup cottage cheese in lumps
- 1/2 Cup grated parmesan cheese
- Fresh Parsley for optional garnish

In a large pan with a tight-fitting lid, brown the ground beef with the chopped onion and garlic powder. Drain and return to the pan.

Pour the fresh spinach over the browned ground beef and simmer over medium-high heat for a few minutes, stirring a few times while the spinach “melts”.

Once the spinach is completely melted, stir in the diced tomatoes (not drained) and the tomato sauce with the Italian seasonings and a little salt and pepper.

Bring to bubble and then stir in chicken broth and bring to bubble again.

Once the broth sauce is bubbling, add the broken lasagna noodles, allowing them to float deep in the sauce as well as on top. Make sure the sauce covers as much of the lasagna noodle as possible so it cooks evenly.

A tight-fitting lid helps the steam to “baste” the top of the noodles as well. Cook over medium-high heat for 8-10 minutes, or until pasta is cooked al dente.

Remove from the heat and add the dabs of cottage cheese (or ricotta if you prefer) and sprinkle over the parmesan and parsley.

Serve the Spinach Lasagna Skillet as a one-dish dinner or with a side of lettuce, garlic bread, or other favorite veggies.
