For today’s recipe, we want to show you how to make delicious vegan “fish” cakes with a wonderful Thai twist. They are as tasty as it is nutritious like the classic ones, made with simple and healthy ingredients.
While many fish-free cake recipes use chickpeas, we’ve opted for cannellini beans instead. They are light cream in color, which makes them look almost like white fish when pureed. Plus, cannellini have a more subtle flavor than chickpeas, which makes our combination of Thai ingredients shine. Plus, they’re packed with proteins and fibers like chickpeas, so you don’t miss out on any valuable nutrients.
After sorting out the texture and color of our “fish” cakes, it was time to tackle the “fishy” flavor. how did we do it With nori sheets. Nori is seaweed with a salty taste, like seawater, which makes us think of fish. Perfect for this recipe! In addition, Nori provides a plant source for Omega 3, iodine, ironand calcium, making it a valuable vegan alternative to fish.
To make our vegan fish patties even tastier, we added a Thai-inspired blend of lemongrass, ginger, chilli, coriander and lime. They take these cakes to a whole new level! So we suggest you don’t skip any of these ingredients if you can find them. Finally, we breaded the bean patties with a light breading, which you can replace with almond flour or corn flour if you are on a gluten-free diet.
Instead of frying our “fish” pies, we baked them in the oven until crisp and golden to keep the fat down. As a result, Each patty has only 145 calories, and it provides 15% RDI of protein and 18% RDI of fiber, all with only 5% RDI of fat. So a serving of two cakes covers your nutritional needs for one meal without adding too many fats, just what we need in a balanced vegan diet.
The best way to enjoy our cannellini fish cakes is to pair them with other delicious Thai dishes like our vegan nasi goreng, green bean pilaf rice and papaya salad. And if you want to round off a Thai dinner, serve it up with our Green Curry Puffs for starters and our Green Pandan Jelly for dessert. Your guests will love it!
