Preparing the tempeh

One of the most common mistakes people make when preparing tempeh is skipping an essential step, boiling the tempeh.
Tempeh has a naturally bitter taste, but boiling removes the bitter taste.
Boiling tempeh not only makes it taste better, but prepares it to soak up any marinade you want to use.
Once the tempeh is cooked, drain it in a colander.

Marinade

First, to perfect tempeh you need to savor the flavor of corned beef. For example, the brining process and the salty, spicy, sour flavor is the magic of the Vegan Tempeh Reuben.
Next, you need to find a vegetarian version of the brining process; I use a combination of pickle juice and beet juice.
For best results, I recommend marinating the tempeh overnight. Although pickle juice and beet juice may sound strange, it’s the perfect combination to make a sweet and sour marinade.
Then, it’s just a matter of grilling the tempeh to make the perfect vegan tempeh “corned beef” for a vegan tempeh reuben.

- Remove tempeh from grill.
- Slice tempeh into thin strips

My Vegan French Dressing recipe is converted to Vegan Thousand Island Dressing by adding pickles!
Making sandwiches
Once the tempeh is grilled, the secret sauce is made, and the sauerkraut is squeezed and drained, you’re ready to make your sandwich.

- Toast bread (optional)
- Spread the vegan thousand island dressing on the base of the toasted bread
- Add pieces of grilled Reuben tempeh.
- Top with a generous amount of sauerkraut
- Drizzle with more vegan thousand island dressing.
- Top with second slice of toasted bread

Sandwich variations
Another suggestion is to make a grilled wrap tempeh Reuben sandwich or serve the sandwich open-faced using just one slice of bread.

If you skip the bread, turn your Vegan Tempeh Reuben Wrap into a salad full of fresh veggies and tempeh and use vegan Thousand Island Dressing.
