  • Cut the puff pastry into 6 equal squares.

  • Place a tablespoon of vanilla soy curd in the center of each square and spread it slightly.

  • Fold in the edges and make a little basket or nest, leaving enough room for the apricot halves (we’ll add them after baking).

  • Place the puff pastry nests on a baking sheet and bake until golden, about 10-15 minutes.
