Vegan Okonomiyaki

Okonomiyaki (お好城焼き) is a Japanese savory pancake. Variations of this dish are found throughout Japan, but its base is usually a wheat dough, with fillings such as cabbage, seafood, meat, grated yam, or even noodles. We were inspired to create a vegan version that uses king trumpet mushrooms for a “meaty” texture and a kombu-infused broth for an ocean flavor.
