Maki, short for the Japanese word makizushi (巻き寿司) consist of seasoned sushi rice stuffed with savory fillings, wrapped in nori seaweed, and then cut into bite-sized pieces.
The use of mango in maki rolls is becoming increasingly popular, particularly in “California” style rolls. These sushi rolls have the nori sheet inside and the rice outside. They are also known as Uramaki (裏巻き) in Japanese or “inside-out” bun.
In this recipe, we combined sweet mangoes with creamy avocado and soft bananas for whole fruit maki rolls. Just make sure you use ripe fruit for maximum flavor!
Because of this delicious combination of exotic fruits, these mango rolls are perfect to end a meal, as a dessert or you can even enjoy them for breakfast.

As for the rice, you’ll need Japanese short-grain white rice, sometimes referred to as “sushi” rice. Follow our cleaning instructions and either cook it in a rice cooker or on the stovetop, then season with rice vinegar, sugar and salt.
Then you need nori sheets. You can find these paper-thin sheets of dried and roasted seaweed at your local Asian grocery store, online, or at any well-stocked supermarket.
And finally, arm yourself with a bamboo mat. A bamboo sushi mat (Makisu, 巻き簾) is important for rolling and shaping the maki. You can find it in sushi kits online or in Asian stores.
