After the success of our Chocolate Lavender Cake and relaxing Lavender Smoothie, we decided to give these gorgeous purple flowers another go. And with summer approaching, we thought what better time to make delicious vegan lavender ice cream?
This wonderful ice cream is not only super creamy and tasty, but also much healthier than a classic gelato. That’s because we made it sugar-free and low-fat with bananas, zero-calorie erythritol and coconut milk. And the good news is that you can actually make it without an ice machine!
Traditional gelato is soft and creamy because it’s high in fat and churned up by the ice cream maker. To make our lavender ice cream low-fat, dairy-free, and vegan, we relied on canned coconut milk and mashed bananas. Together these two ingredients create a nice creaminess that is very similar to classic ice cream. But with only a third fat!
Using ripe bananas also adds natural sweetness to the ice cream, meaning you don’t need a lot of extra sugar. The bananas will slightly affect the final color of the lavender ice cream, giving it a duller purple hue – but we think making the ice cream less fat and less sugar is an acceptable compromise.
Finally, if you don’t have an ice cream maker, we’ll give you a step-by-step guide on how to make the ice cream without it. It’s a simple process that requires very little work from you, but you have to be at home all day. So this recipe is perfect for a cozy weekend at home.
