A wonderful vegan meat substitute, jackfruit is so versatile that you can cook it in many different ways. You can find jackfruits pickled in water or brine at your local grocery store or Asian grocery store.
Unlike the ripe fruit, the young green jackfruit is not sweet and has a mild taste. And it’s so “meaty” and meaty!
You can cut the fruit into pieces and use it for burgers, nuggets or stews. Or you can cut it into strips to make pulled jackfruit for sandwich buns or a vegan chicken salad!
For this recipe we wanted to use jackfruit to recreate the texture of classic gyros meat.
Traditionally, pork or chicken is cooked on a vertical rotisserie and then cut into thin and crispy shavings.
To achieve a similar result, we shredded jackfruit into thin strips, which we seasoned with spices and herbs and oven roasted until crisp. It worked wonderfully!
The jackfruit seasoning contains all the classic gyros marinade ingredients: lemon juice, onions, garlic, cumin, oregano and chili powder. We also used tomato passata for color and smoked paprika powder for a delicious smoky finish. The result is so delicious you won’t believe it was made without meat!
When you’ve cooked the jackfruit, the gyros is practically done. All you have to do is prepare our vegan tzatziki, bake the fries and you’re ready to fill the wrap. We recommend using thick Greek-style flatbread, but you can opt for pita pockets if you prefer.
One of these jackfruit gyros makes a filling vegan meal only 400 calories. It covers 20% RDI of carbohydrates, 30% RDI of proteinsand a full one 50% of your RDI for fiber – all with very few small fats.
The good news is that you can make the gyros days in advance and reheat later, which is perfect for meal prep!
