pie code is a popular snack in Haitian culinary tradition. It is a fried patty usually filled with beef, chicken, or herring. It is rich, indulgent and with bold flavors. In our healthier plant-based versionwe swapped meat for beans and baked the pastries in the oven instead of frying them.
Preparing these vegan patties is super easy since you can use a ready-made non-dairy batter instead of making the batter from scratch. Simply cut into rectangles, add the vegetable filling and shape into patties. All that’s left to do is bake them until they’re puffy and crispy. We bet they won’t last long out of the oven (ours definitely won’t)!
Haitian cuisine is a Creole cuisine based on a fusion of French, African, and Spanish culinary traditions. To honor this rich history, we’ve only used ingredients common to Haiti, such as bell peppers, Scotch Bonnet chillies, red beans and other local spices.
