how did we do it With a few simple tweaks to the classic Lamington recipe. We traded butter cake for one gluten free sponge made from rice flour and almond flour; then we replaced eggs and butter with flaxseed and olive oil; finally we used mashed ripe bananas instead of refined sugar.
The result is a moist and soft cake with a slightly nutty taste. After cutting it into squares, we coated the lamingtons with a simple glaze of melted chocolate and oat milk. Use dark chocolate Instead of classic butter and powdered sugar, our glaze is low in fat and sugar.
Now all you have to do is roll the Lamington squares in coconut flakes and wait for the coating to set. We were so impatient we gulped them down while they were still warm and gooey!
