This Vegan Banana French Toast makes such a delicious and easy weekend breakfast! It’s moist, sweet, filling and ready in just 5 minutes!
Why this recipe works
Traditional French toast consists of slices of bread that are soaked or dipped in eggs and milk and then fried in butter or oil.
Fortunately, it’s pretty easy to make vegan toast without milk and eggs. It turned out super moist, sweet and perfect for the weekend.
For my recipe, I used a batter that consists of mashed banana, almond milk, cinnamon and natural vanilla extract.
Banana puree serves as a great substitute for eggs in this recipe. And at the same time it is also an amazing sweetener.
I have tried different types of oil for this recipe. My favorite by far was the coconut oil. It worked best to get the french toast nicely browned. And it also added a great coconut flavor, which blended perfectly with the rest.
Cinnamon and vanilla extract add a nice flavor. Serve with a drizzle of maple syrup, vegan butter, and fresh berries for ultimate flavor.
I love that you only need very few ingredients for this recipe. And you can find all the ingredients at any regular grocery store.
What this recipe includes:
- banana – make sure it’s ripe (it should have lots of brown spots). The riper it is, the sweeter it is.
- bread – I prefer crusty white bread. It may take a couple of days.
- Almond milk – I usually use unsweetened plant milk. Soy or oat milk also works.
- coconut oil – adds a slight coconut flavor.
How to make this recipe:
1. Step: Cut the bread into thick slices.
2./3. step: Mash the banana with a fork in a shallow bowl.
4. Step: Add the almond milk along with the cinnamon and vanilla extract.
5/6 stepThen dip each slice of bread into the banana almond milk mixture for about 10 to 15 seconds.
7/8 step: In a large pan, heat some coconut oil over medium heat and cook on each side until golden. For me, this took about 3-4 minutes on each side.
Recipe notes:
- Make sure you use ripe bananas. They are much sweeter.
- It is best to use day-old bread. It will absorb more of the dough without falling apart. Older bread is fine too, but I wouldn’t recommend using freshly bought bread.
- I like this recipe best with coconut whipped cream and fresh berries.

Chill your coconut cream in the fridge overnight (make sure you don’t shake it so the cream and liquid stay separate).

Mash the banana with a fork in a shallow bowl and add the almond milk along with the cinnamon and vanilla extract.

Then dip each slice of bread into the banana almond milk mixture for about 10 to 15 seconds. In a large frying pan, heat some coconut oil over medium heat and cook on each side until golden brown. For me, this took about 3-4 minutes on each side.

Make the coconut cream: Place the stiffened cream in a bowl. Beat for 30 seconds with a mixer or until creamy. If you want, you can add a little agave or a sweetener of your choice.

Serve the vegan French toast with the coconut cream and berries.
