Vegan French Lentil Soup
serving 4 serving

- 2 spoon Neutral oil
- 1 onion to cut
- 1 the ribs Celery finely chopped
- 1 the cup the carrot finely chopped
- 2-3 cloves garlic Mince finely
- 5 the cup Vegetable broth
- 1 the cup French/pui lentils wash off
- 1 to be able to Square tomato 15 oz
- 1 spoon Tomato paste Doubly concentrated
- 1-2 spoon Gochujang paste
- 2 sprigs fresh thyme
- 2 bay leaf
- salt to test
- pepper to test
instructions

Add neutral oil to a pot and fry the carrots and celery for 2-3 minutes until fragrant. Add onion and a touch of salt and cook for another 3-4 minutes.

Add garlic, fresh thyme, gochujang and tomato paste. Cook, stirring regularly, until the tomato paste turns dark in color.

Add the veggie broth, bring to a gentle boil, add the bay leaves and reduce to a simmer. Cover and let cook for 15-20 minutes until lentils are tender.

Season with salt and pepper to taste.
