What’s more exciting than a hot corn on the cob? In Mexico, home of corn, they make a treat street food called grilled corn on the cob elot this is just too good to resist. That’s why we’re so excited to share with you our vegan version of this Mexican dish, perfect for everyone!
Preparing elote at home is super easy, even if you don’t have a grill. In the following recipe we show you how to get perfectly grilled corn on the cob in the oven. All you need is an oven rack.
Elote means corn on the cob in Spanish and Mexican Elote consists of grilled corn on the cob brushed with sauces and garnished with toppings. Classic sauces include butter puree, mayonnaise, or sour cream, while common toppings include grated cotija cheese, chilli powder, and fresh coriander.
In our recipe, we prepared a vegan elote sauce alternative that is dairy and egg free. Not only is it 100% plant-based, but it’s also incredibly delicious thanks to two delicious ingredients. We used our vegan cashew mayo as a base, but you can also use store-bought vegan mayo.
For the toppings, we kept the traditional Elote ingredients but replaced the cheese with our plant-based Cotija cheese. You can follow our recipe and make it from scratch with cashews or use any semi-hard vegan cheese you can find at the grocery store like vegan feta or vegan parmesan.
