Today we return to the famous ones coronation Chicken, a historic recipe here in the UK, and make it vegan. Our plant-based version is also super easy and quick to make, ready in just 15 minutes. Let us show you how it’s done!
Ccoronation Chicken is a British dish created for the coronation banquet of Queen Elizabeth II on June 2, 1953. The recipe combines cold roast chicken with “exotic” Indian flavors like curry and mango. Since then, the coronation chicken has become a huge hit and is now a traditional British dish that comes in many flavorful variations.
The classic recipe features cooked, shredded chicken coated in a rich curry dressing. The Coronation Sauce is made by blending a thick syrupy mixture of sautéed butter, chili peppers, onions, curry powder, tomato puree, chicken broth, and apricot jam with mayonnaise and crème fraiche. Finally, the dish is topped with chopped mango, fresh coriander and almonds and served on a bed of lettuce.
As the name suggests, the Coronation Chicken recipe isn’t vegan: it contains chicken, dairy made with butter and creme fraiche, and eggs made with mayonnaise. So we decided to make a plant-based, dairy-free, and egg-free version of this famous dish that’s perfect for everyone to enjoy with confidence. And it’s just as delicious as the classic!
We used canned green jackfruit in place of chicken, cooked it with spices and cut it into chicken-like pieces. Then we replaced regular mayo with our homemade vegan cashew mayo, but you can use store-bought too. We’ve also simplified the recipe to use as few ingredients as possible, and we’ve swapped out jam for whole dried apricots and raisins for a sweet, chewy finish.
The result is a quick vegan chicken salad, sweet, spicy and crunchy, with a delicious combination of exciting flavors. And the good news is it has a serving only 180 calories and 11 grams of fats, which translates half the calories And three times less fat than the non-vegan. So make a large batch of this and use it to fill a salad bowl, fill a jacket potato, or fill a sandwich. Yummy!
