My grandmother used to make carnation chicken salad and boasted about the recipe that the Queen of England herself would eat for lunch. Of course, he served us tea sandwiches with cups of tea in his finest china cups. And we felt like princesses! So, today, I made a vegan coronation chicken salad recipe, ate lunch and sipped tea from my grandmother’s china.

- Green Onion: Green onions are mild in flavor and provide a crunch to salad recipes.
- Red Grapes: Red grapes are traditionally added to Coronation Chicken Salad. They are sweet and add a nice flavor.
- Celery: Celery adds crunch and freshness to salads.
- Lemon juice: I love fresh lemon juice whenever possible.
- Poultry Seasoning: Despite the name, poultry seasoning is vegan. The main spice is halloumi sElderberry, thyme, rosemary, marjoram, nutmeg, and onion powder. Together, these dried herbs make the best poultry seasoning.
- Dry Mustard Powder: Dry mustard, or mustard powder, is a common ingredient in savory dishes, spice rubs, salad dressings, and marinades. It is made from ground mustard seeds and is readily available in the spice aisle of most grocery stores.
- Curry Masala: The main ingredient in curry powder is turmeric, which gives it a yellow hue but little taste. The mild flavor of the mixture is credited to spices like fenugreek, cumin and coriander.
- Khubbani Jam: Providing a sweet fruity taste, the jam is made from puree of apricots.
- Mango Chutney: Mango chutney is a condiment made with mango, spices, distilled vinegar and sugar. It has a sweet and sour taste with a spicy tinge.
- Cashew Mayo: I make homemade cashew mayo, but if you need a nut-free option, please see the options in the recipe.
Substitute salad ingredients
- Instead of chickpeas, try white beans such as navy beans or great northern beans.
- If you enjoy mock meat options, choose your favorite mock chicken.
- Shallots are similar to green onions.
- Fennel or jicama is similar to celery; However, fennel seeds have a licorice flavor that is more pronounced when eaten raw.
- Use bottled lemon juice if fresh is not available.
- For a great alternative to poultry seasoning, swap 1 tablespoon chicken seasoning for 2 teaspoons sage and 1 teaspoon dried thyme or marjoram.
- The best alternative to dry mustard is ready-made Dijon mustard! Use 1 teaspoon dry mustard = 1 tablespoon Dijon mustard. This substitution works for most types of recipes.
- Cumin and allspice are a good combination to add warmth and sweetness to the curry powder.
- Apple or fig jam would be a good substitute for dishes where the apricot flavor is not as important.
- Watermelon chutney is a delicious condiment made from ripe watermelon, vinegar, sugar and spices. It is usually used as a topping for curries or rice dishes, but can be enjoyed on its own as a sweet and tangy snack.
- Substitute hemp hearts, sunflower seeds, silken tofu or white beans for the nuts in the cashew mayo for nut-free options. Or, choose your favorite vegan mayo.
How to Make Coronation Chicken Salad Vegan

- Start by draining and rinsing the chickpeas.
- Pulse the chickpeas in a food processor with a large blade.
- Do not over-pulse; Instead of pureeing chickpeas, it should be spread with chickpea pieces.
- If you don’t have a food processor, mash the chickpeas with the fork of a potato masher.
- Transfer the mashed chickpeas to a bowl.
- Add grapes, celery, onion and almonds.

Make the dressing

- Combine cashew mayo, spices, apricot jam and mango chutney in a bowl.
- Whisk the ingredients together and pour into the bowl with the salad ingredients.
- Stir to combine.

Coronation Chicken Salad
