Vegan Christmas Breakfast – Jenny Claiborne’s Sweet Potato Soul

A Christmas Story Loop on the TV, the smell of fresh coffee and something warm and sweet wafting down the hall from the kitchen, and a serene silence outside; It’s so quiet you can almost hear the snow falling. It must be Christmas morning! And that smell? A delightful vegetarian Christmas breakfast.

Baby J is at the age where he can really start enjoying and appreciating the holidays The only thing that would make Christmas morning more perfect is snow in Atlanta! I love Christmas mornings because they remind me of childhood, but I also see the joy in my daughter’s eyes as the tree lights reflect off them.

Another thing I love about Christmas morning is how relaxing it is. Sweet food, warm drinks, tree lights, and movies on TV. It just might be my favorite morning of the year!

Start your morning with this delicious matcha oat milk latte. It will give you the caffeine you need to get you through the day without the jolt of coffee.

I like to prepare some of my breakfast foods the day before so my daughter and I can relax and enjoy it with the family. These Christmas morning goodies are great to make ahead of time and pop in the oven in the morning.
