With Mother’s Day right around the corner, I wanted to make my mom a special treat. My mom’s favorite chocolate bar is called the Eat-More Bar. These bars are only sold in Canada so if you’re not in Canada you may not have heard of them They’re chewy, chocolatey, and jam-packed with peanuts! My mom said she always thought all the chocolate bars blended into one perfect bar, lol!
Eat-More bars contain dairy so I decided to make them vegan (isn’t homemade always better)? After a few recipe tests, I nailed the chocolate-peanut butter flavor and the caramel-chewy chocolate texture! I was so excited to give these to my mom that I gifted them to her early and she told me they tasted just like store bought chocolate bars… but so much better!!
These Vegan Chocolate Peanut Bars are so easy to make and they can even be frozen. They are gluten-free, and dairy-free so they are very allergy friendly. (See the recipe notes for a few other options if you can’t use peanuts). These bars are great for gift giving, bringing to parties, potlucks, or enjoying yourself! I love having a glass of white wine after dinner. Talk about delicious!!!

How to Make Vegan Chocolate Peanut Bars:
Line a 9″ x 9″ baking pan with parchment paper, or use a silicone baking pan.
Combine corn syrup and peanut butter in a medium saucepan over medium heat.
When the mixture starts bubbling, simmer gently for 5 minutes. Stir frequently and adjust heat as needed to ensure it doesn’t burn. The mixture may be slightly foamy.
After 5 minutes take the pot off the heat. Add the chocolate chips and vanilla extract and stir well to melt the chocolate into the mixture.
Finally mix well with peanuts. Pour into prepared pan and use a spatula to spread evenly. Let chill in the fridge for about 3 hours or until it’s cold and set.
Cut into 16 bars (or whatever bar size you prefer). Store Vegan Chocolate Peanut Butter Bars in an air-tight container at room temperature for up to 2 weeks or store in the refrigerator.
