Chicken parmesan, also known as Chickenis a fusion between two traditional Italian recipes: the cotoletta (minced meat, breaded and fried) and the parmigiana (a dish of layered aubergines cooked with tomato sauce, parmesan and mozzarella). Chicken parm is very popular in the United States, where it’s often served on top of spaghetti or stuffed into sandwiches.
The classic recipe consists of chicken breasts that are brushed with flour, washed with eggs and coated in breadcrumbs, then deep-fried until crispy. The chicken is then topped with tomato sauce, parmesan, mozzarella and baked until the cheese melts. It’s a tasty and filling dish, but unsuitable for people on a vegan diet, dairy and egg allergies, or gluten sensitivity.

how did we do it With a few simple adjustments! First we have one plant-based “chicken” substitute with pureed chickpeas, oatmeal and an aromatic spice mix. Then we spread it with vegan “flax egg”, gluten-free breadcrumbs and breadcrumbs oven baked it instead of frying it. Finally, we swapped parmesan and mozzarella for nutritional yeast and vegan cheese, respectively.
The result is a nutritionally healthy dish that packs a punch lots of protein and fiberwith less fats than the classic chicken parmesan. Each serving provides 26% of the RDI for protein and 30% of the RDI for fiber, all within the recommended amount of fat per meal. Impressively!
