Isn’t it great when you can make a great breakfast by soaking things overnight? Birchermüesli (the Swiss version of overnight oats) are just that: lots of flavor without breaking a sweat.
Today we show you how to make milk-free and vegan Birchermüesli. We use a mixture of nuts and seeds, apples, goji berries and a very special blend of spices. It is a suprise!
This recipe is so easy it’s silly. Just combine all the ingredients in a bowl, let it soak overnight and take your breakfast out of the fridge the next morning. Top with crunchy nuts and you’re good to go.
To make it veganwe have replaced milk yoghurt and milk with soy yoghurt and soy milk. Everything else is plant based so you don’t need to make any changes to make this a healthy breakfast. Because we used fruit (dry and fresh), no additional sugar is needed. This recipe is naturally sweet and 100% sugar free.
The beauty of mixing all these healthy ingredients together is that we get a huge chunk of our daily nutrient intake in one fell swoop. A bowl of our yoghurt and fruit muesli gives you 33% RDI of protein, 34% RDI of fiber but only a lean 1.5g of saturated fats (8% RDI) and 12g of sugars (13% RDI). Not bad as a starter of the day, right?
The final benefit of making granola at home is that it will be much cheaper than bought in a store. It’s pretty shocking how much you get ripped off for buying these pre-made boxes. You can say goodbye to that! In addition, you can precisely control the freshness and quality of the ingredients used and avoid the use of preservatives.
