All you donut lovers, we bet you’ll fall for these wonderfully purple Ube donuts. And the good news is that you don’t need nasty artificial coloring, just deliciously purple yams or Ube butter. They are soft and pillowynot to mention incredibly delicious!
But first what is Ube Exactly? Ube is a type of yam with bright purple flesh and is therefore also known as purple yam. This root vegetable is very common in the Philippines, where it is used in preparation Ube Halaya (purple yam spread) and many desserts such as cakes, ice cream and pastries.
Starchy, colorful and slightly sweet, ube is the perfect addition to many sweet baked goods and treats. So after making Ube butter spread from scratch, we thought why not make some stylish purple donuts with it? And oh my god, they came out just too cute!
We started with the traditional yeast donut recipe, swapping out milk butter for homemade Ube spread. It’s super easy to make—all you need is fresh purple yams and coconut oil. But if you can’t find yams or don’t have time for the ube butter, don’t worry! You can use pre-made ube spreads which you should be able to find online.
Our purple yam donuts are too 100% dairy free and vegan because we didn’t use eggs and cow’s milk. And for a healthier shoot we even have baked in the oven instead of fried them. If you still prefer your donuts the classic way, we will explain how to fry them in the following steps.
No donut is complete without a glossy glaze! So we coated ours with a sweet purple frosting made with Ube butter and powdered sugar. By the way, you can also use powdered, sugar-free erythritol instead of sugar to be able to enjoy one of these beauties without any worries.
