Ube is a delicious and versatile Filipino root that can add flavor and a pop of color to candies and baked goods. Today we want to show you how to make colorful Ube bars with this wonderful ingredient. They’re quick and easy to make and perfect when you need a sweet pick-me-up!
These delicious bars are made with a base layer of crispy puffed rice covered in white chocolate and a top layer of sweet Ube butter. They’re crispy and crunchy at the same time – indulgent and irresistible.
We made the ube layer with our homemade ube butter. It’s a sweet and creamy spread made with pureed purple yams and some coconut oil.
Our ube butter is a take on the classic Filipino ube halaya (purple yam) that works as both a spread and a butter alternative.
Because it contains coconut oil, it has a more buttery consistency than ube halaya and will harden if left in the fridge for a few hours.
It’s perfect as a topping for the rice crispies layer, and as it sets in the fridge you can easily and cleanly slice the bars.
So if you can find fresh purple yams at your Asian grocery store, you can make ube butter from scratch using our recipe.
And the great thing is, you can use leftover ube butter for other colorful recipes, like these ube waffles, ube brownies, and ube loaf.
However, if you can’t get hold of ube or don’t have time to make the ube butter, you can still make these ube bars using pre-made ube halaya.
Simply mix Ube Halaya with some coconut oil and you are good to go. Be sure to follow our exact instructions in the recipe below for perfect results.
Once you have your ube butter sorted, making these ube bars is ridiculously easy. Coat rice crispies with melted white chocolate, spread out in a square shape and top with the ube layer. That’s it!
You can use sweetened rice crispies or plain puffed rice to keep the sugar down. And if you’re vegan or have a dairy allergy, swap out regular white chocolate for vegan white chocolate, available online or in health food stores.
