When I first went plant-based, my biggest struggle was giving up cheese. Of course, I’m over it, but I still prefer the texture and flavor associated with cheese over the taste of cheese. For that reason, I enjoy experimenting with cheese sauces like vegan nacho cheese sauce or cashew miso cheese sauce. So, since feta was one of my favorite cheeses, I decided to throw my apron in the ring and try making my own version of tofu feta cheese. And I love this tofu feta cheese recipe!

Although I’ve tried other tofu feta cheese recipes, I don’t really like the spongy taste of raw tofu.
As a result, I decided to go on the wild side, marinate my tofu, cook it, and then return it to the marinade for a firmer texture.
And it works!
So, let’s make some delicious vegan tofu feta cheese!
Different types of tofu

At first glance, I can understand why choosing a type of tofu can be difficult for a beginner or even a seasoned vegan veteran. The variety of tofu choices in supermarkets increases as a plant-based diet becomes more popular.
There are five types of tofu to focus on: silken, medium, firm, extra firm and sprouted. While you can now buy braised, smoked and pre-baked tofu, we’ll focus on the ones we cook with.
Silken tofu, for example, has the most water of all tofu textures. Thick, creamy, silken tofu surfaces like custard or thick yogurt. When baking, I use silken tofu in dressings, sauces, dips or to replace eggs.
on the other hand, Medium tofu A bit thicker than silken tofu, but it’s still really delicate and falls apart quickly. So, I rarely buy medium tofu because I prefer a firmer and less spongy texture.
For example, firm tofu Another step up in terms of low water content and firm structure. Plus, it makes a great tofu ricotta cheese like my Zucchini Stuffed with Veggies and Tofu Ricotta. While I prefer more frozen tofu for tofu scramble, firm tofu is perfect if you like your tofu scramble on the softer side.
Extra firm tofu It’s my go-to for most recipes because it’s easy to handle and contains less water. But, again, for me, it’s all about convenience. Extra-firm tofu takes less time to press and holds together when grilling, baking or sautéing in a pan.
And then, there is Sprouted Tofu, the Cadillac of all tofu. Sprouted tofu, for example, does not need to be pressed. As a result, I chose extra-firm tofu to use in my tofu feta cheese recipe.
Does tofu need to be pressed?

For years I avoided eating tofu. Every time I made tofu, I moved it to the side of the plate because it was either fried or mushy. Most restaurants fry it, which I’m not interested in, and people who bake and grill seem to have the same problem as me; Soft flavorless tofu.
Then, I scooped it out with my EZ Tofu Press. I bought it on Amazon and I made the same mistake in the beginning. I didn’t follow the instructions (a problem of mine, haha); I was in a hurry as usual, and I got the same result… tasteless tofu I didn’t like.
Not just the EZ Tofu Press Easy to use, but it’s the cheapest on the market! I’ve owned it for years and never had to replace it. So, if you’re looking for a quality tofu press that won’t break the bank, this is a great deal.
How to press tofu
- First, carefully remove the tofu from the package, discarding the liquid from the package. It’s fine, though, so be gentle.
- Then, place the tofu in the middle of the press and turn both knobs evenly about four turns.
- I usually put the tofu press in the sink next to it to drain properly.
- Turn the knobs every two minutes, until the tofu is about an inch or an inch and a half thick.
- Most people stop here…not yet. Keep turning until the knobs are screwed in until they almost touch the opposite ends.
How to cook tofu
Grilling
- Preheat grill to low (400 degrees).
- Place a grill mat on the grill or place the tofu directly on the grill for grill marks.
- Cook for about 8 minutes on each side, turning every four minutes for grill marks.
- Remove tofu from grill and cool until cubed.
- Then, cube the grilled tofu and return it to the marinade.
Then, dice the tofu and return to the tofu feta cheese marinade. That’s all it takes. Once you’re ready to serve the tofu feta cheese, add some to your favorite dish.

baking
- Follow the same pressing and marinating process.
- Then, preheat the oven to 400 degrees.
- Place sliced or diced tofu on a silicone baking mat or parchment paper
- Cook for 15 minutes.
- Remove from oven and flip tofu over; Cook for an additional 15 minutes.
- Return marinade to an airtight container.
Air-frying
- Follow the same pressing and marinating process.
- Set the air fryer temperature to 375 degrees.
- Cook for 10-15 minutes, shaking the basket several times during cooking.
- Return marinade to an airtight container.
Serving advice

Tofu feta cheese
Tofu feta cheese is great for adding a perfect topping to salads, sandwiches and pasta dishes. Or, eat it with your favorite Mediterranean vegan nosh board.
instructions
Tofu Feta Marinade
In a high-speed blender, add all ingredients except chopped parsley.
High mixed.
After blending add the parsley and stir.
Add ¼ of the marinade to a bowl, add a row of tofu, more marinade, and repeat until the tofu is covered with the marinade.
Cover and refrigerate overnight.
Grilling
First, preheat the grill to 400 degrees (low).
The grill should be hot before adding the tofu.
Remove the tofu from the marinade, but keep the marinade (do not discard).
Then place the tofu directly on the grill or on a grill mat and cook for 8 minutes on each side, turning every 4 minutes to achieve grill marks.
Remove the tofu from the grill and let cool completely.
Then, cut the grilled slabs of tofu into bite-sized cubes.
Return the cubed tofu to the marinade and refrigerate overnight before using.
baking

Then, preheat the oven to 400 degrees.
