Ingredients

Coffee Sponge Cake

  • 3/4 Cup (95 g) all-purpose flour
  • 1 tsp (4g) baking powder
  • 1 tsp (2 g) instant coffee powder
  • 1/2 tsp (2g) salt
  • 4 eggs
  • 2/3 Cup (135g) sugar
  • 1 tsp (5g) Vanilla Extract
  • 2 tablespoon (28 g) vegetable oil

coffee blend

  • 1/3 Cup (80ml) espresso
  • 1 tablespoon (15 mL) Marsala Wine

Mascarpone Frosting

  • 9 oz (250 g) mascarpone cheese room temperature
  • 1 Cup (240 g) whipped cream chilled
  • 2 tsp (4 g) instant coffee powder
  • 1/2 Cup (60 g) powdered sugar
  • 1 tsp (5g) Vanilla Extract

Coffee whipped cream topping

  • 7 oz (200 g) whipped cream chilled
  • 1/4 Cup (30g) powdered sugar
  • 1 tsp (2 g) instant coffee powder

To decorate

  • cocoa powder for dusting

  • Preheat the oven to 350F (180C). Lightly grease a 30 x 40 cm baking tray and line with parchment paper.

  • In a medium bowl, whisk together the flour, baking powder, instant coffee, and salt. Put aside.
