Viral Tiktok Cucumber Pepper Salad

This Asian Cucumber Salad recipe is my take on a recipe that went viral on Tiktok not too long ago. I saw the video and just knew I had to recreate it. Of course I did! However, this version includes avocado for a bit more texture and creaminess and the homemade ginger dressing from my cookbook.

And it’s that good.

This salad is packed with unique flavors, perfectly fresh, crunchy textures, and just the right amount of spices. It’s ready in just minutes and has a flavor that will hold you back for seconds.

Ingredients needed:

  • Cucumber: You will need 1 large cucumber or 4-5 small Persian cucumbers.
  • Sweet mini peppers: I use 1 bag which usually contains around 12-15 peppers.
  • Avocado: The traditional Tiktok salad but I love the creamy texture it imparts.
  • Ginger dressing: i use mine homemade ginger dressingbut you can use any ginger dressing you like—store bought or homemade!
  • All Bagel Seasoning: Adds the perfect dose of extra flavor to the salad. Don’t have this handy? Make your own homemade bagel seasoning!
  • Chili Crunch Oil: I use 1-2 teaspoons. Feel free to add more or less depending on your spice preferences.

How to Prepare Asian Cucumber Salad:

This fresh cucumber salad recipe is ready in under 10 minutes – veg prep and all!

  1. Prepare the vegetables: Cut the cucumbers into bite-sized pieces, dice the avocado and slice the peppers.
  2. Prepare dressing: Mix up the ginger dressing recipe of your choice.
  3. Combine: Place all the veggies in a mixing bowl, sprinkle with any bagel spices, then drizzle with the ginger dressing and chili crunch oil. Stir gently to combine.

How to prepare cucumbers for a salad?

It really doesn’t take much to prepare the cucumbers for this salad. Just cut them into bite-sized cubes!

Are cucumbers peeled for salads?

nope! I use either English or Persian cucumbers, both of which have skins so thin that peeling isn’t necessary.

If you’re using a different type of cucumber with a firmer skin, I recommend peeling it.

Let’s talk ginger dressing

I use this recipe, but you can use store-bought ones too! It would also be the perfect dressing for shrimp and avocado salad, the best spring salad ever, or served with my family’s favorite grilled chicken thighs or air fryer salmon!

How do you keep cucumber salad from getting soggy?

The key to avoiding a soggy cucumber and avocado salad is to add the dressing just before serving.

If you’re making the salad ahead of time at all, I recommend preparing the dressing but keeping it separate. When you’re ready to serve your salad, simply drizzle over the dressing and enjoy.

  • Chop everything evenly. I recommend cutting the cucumber and peppers into evenly sized pieces so they mix well.
  • let it rest For the best flavor, I like to chill the salad in the fridge for 20-30 minutes. This will give the dressing some time to soak into the veggies and mix everything together.
  • Not a big fan of spices? Just leave out the chili crunch oil.

  • 1 ripe avocado rolled
  • 1 batch ginger dressing homemade or store bought
  • 2 teaspoon all bagel spice homemade or store bought
  • 1-2 teaspoon Chili Crunch Oil according to taste, more or less according to desire
  • Slice the cucumbers, peppers and avocados and set aside.

  • Prepare ginger dressing and set aside.

  • Assemble: In a large bowl, place sliced ​​cucumbers, peppers, and avocado, then add desired amount of ginger dressing (I usually use a lot of my homemade), any bagel seasoning, and chili crunch oil. Taste and adjust the spices to your preferred taste.
