1 cup vegan yogurt
1 cup sliced ripe banana
1 cup oat flour
½ cup almond meal
1½ teaspoons baking powder
¼ teaspoon salt
2 teaspoons vanilla extract
what do you do:
- Preheat waffle maker according to manufacturer’s instructions.
- In a blender, add yogurt and banana and blend until smooth. In a mixing bowl, stir together the oat flour, almond meal, baking powder and salt. Add the yogurt-banana mixture to the dry ingredients along with the vanilla. Mix to combine.
- When the waffle maker is ready, pour ½ cup batter into each waffle mold. Close the lid and let it cook for about 5 minutes (time will vary depending on the waffle maker). Check the waffles, and if more brown, allow to cook another minute. When ready, remove and transfer to a cooling rack. Repeat with remaining batter.
