Welcome to the weekend, my friends! I had a fun week in the sun while visiting friends in Utah. Shawn, Natalie and I were doing an easy hike up the Aspiration Trail one morning and snapped this photo above.
There are hundreds of rocks lining the trail all the way up the hill and it was a great way to spend some time outdoors. If you are visiting the St George area this walk/hike must be on your to do list.
ON THE BLOG this week: Is there anything better than coming home and smelling the smell of a meal simmering in the pot? Cooking corned beef and cabbage in the slow cooker is so easy it practically takes care of itself.
Lucky enough to have spare corned beef? Crispy hot potatoes and cabbage are combined with bites of tender, salty corned beef to create the corned beef and cabbage hash of your dreams.
My husband’s favorite soup takes all the Reuben flavors you love and combines them in one steaming hot bowl of soup, perfect for those chilly nights. Don’t skip the rye bread to serve with the soup, it gives the perfect finishing touch.
For something different the next time you make corned beef, baked corned beef with honey mustard glaze comes out moist and juicy with a gooey sweet glaze on top that no one can resist.
Tender, salty corned beef, bite-sized potato chunks, and shredded kale are combined in a hearty broth to make this hearty corned beef soup. This food always makes everyone in my family happy.
Chicken and veggies simmer in a creamy filling beneath a flaky cookie topping to make these custom chicken pot pies. Do you prefer a casserole? Instead, just bake it like this. However you prepare it, this dinner is quickly disappearing.
Tired of making banana bread when the bananas on the counter are past their prime? Chocolate Chip Banana Pancakes are a quick, easy breakfast that I would love to have for dessert, too.
Air fryer Brussels sprouts are the popcorn of the vegetable world. There’s no way you can only eat one of these – they make such a great snack or side dish. I have a feeling Brussels sprouts are finally getting the attention they have long deserved. Straight from the air fryer or sprinkled with a balsamic glaze, I could happily snack on it every day.
What I crave: These banana split frozen bites look like a lot of fun and could be a great way to have some healthy snacks on hand, too. I’m going to make some this weekend with the bananas we have on the counter. I can’t wait to try them!
my favorite things This week these are freezer containers. I ordered more this week and can’t wait to fill them up for ice cream season. (Technically, every day on our world is ice cream season, but we sure make more in the warmer months.)
I originally bought these many years ago specifically for storing homemade ice cream. However, I have learned to love her for everything. From storing leftovers, making salads, taking meals to friends, and freezing soups and sauces, just about anything works in these sturdy containers.
What I watch: elvis Although I love some of his songs, I’ve never really been a huge Elvis fan. However, the preview for this film caught my attention and I really enjoyed it. Austin Butler gave an absolutely incredible performance and so did Tom Hanks. This film deserves every award it has won and more.
What I read: Digital Minimalism: Choosing a Focused Life in a Noisy World by Cal Newport. Oh my friends, this is such a good read. Even if you’re not necessarily interested in reducing your use of technology, here’s a lot of solid information that can make you rethink the way you use your devices. If you’re anything like me and have thought about how much time we spend staring at our phones, this book will likely inspire you.
“I am the Lord; I called you in righteousness; I will take you by the hand and keep you.” Isaiah 42:6a
Have a great week full of little things that make you smile!
