What are soba noodles?

Soba is a type of Japanese noodle made from buckwheat flour. Despite the name, buckwheat is not wheat flour and is actually gluten-free. It tastes earthier and has a nutty flavor, which is a delicious addition to this soba noodle recipe.

Buckwheat noodles can easily be substituted with other Asian noodle types like ramen, udon or brown rice noodles.
