Ready to spice up your pizza game with a delicious Thai twist? This Thai veggie pizza is loaded with a creamy peanut sauce and colorful fresh vegetables. And it’s easy enough for a weeknight dinner! Vegetarians and vegans too.

We cook a lot in our house, but there is one thing that makes the list almost every week. Pizza! We love making homemade pizza and we make it a family activity most weekends.
So I thought I’d experiment with some new topping ideas. Given that Thai is one of our all-time favorite cuisines, I decided to rock pizza night with this Thai inspired creation.
It turned out totally delicious. And it was so easy that I may have to add this recipe to our weeknight dinner rotation!

Tips and variations
Pizza Crust: I used my homemade pizza crust recipe for the dough. But you can use any pizza dough recipe you like, store-bought pizza dough, or even a premade pizza crust. They will all work just fine. Just be sure to adjust the cooking time based on the package instructions so you don’t burn your pizza!
Peanut Sauce: This recipe includes my own homemade peanut sauce. If you want to make it even easier, you can substitute a store-bought sauce. I like this one from Annie Chun. Just be sure to check the label, as some brands are not vegan friendly.
Mix up the toppings! Feel free to experiment with your own favorite vegetables for toppings. I used bell pepper and yellow onion. But shiitake mushrooms, red onions or broccoli would be great choices. You can also swap mandarin oranges or mango slices for pineapple!

- ½ yellow onion thinly sliced
- ½ the cup Mung bean sprouts
- ½ the cup pineapple to cut

Preheat oven to 400 degrees F (204 C).

Roll out the pizza crust on a clean, floured surface. You can make one large pizza or divide the dough into smaller portions for individual sized pizzas.

In a small bowl, whisk together the peanut butter, vinegar, ginger, garlic, brown sugar, pepper flakes, and 1 tablespoon water. Add additional water as needed, one tablespoon at a time, until the sauce reaches a creamy consistency.

Spray a nonstick pan with cooking spray and heat over medium-high heat. Saute the peppers and onions for 5-7 minutes, until softened. Set aside.

Spread sauce over pizza crust. Top with peppers and onions. Bake for 10-15 minutes or until crust is golden brown. (Check often, as baking time may vary depending on your crust recipe.)

Remove pizza from oven and top with mung bean sprouts and fresh coriander leaves. Serve!
