I love those Turkey Salad Wraps! Years ago I lived in Chicago and we all went to PF Changs for dinner. Everyone ordered the lettuce wraps and I was like, “Meat in the salad??… yes, that sounds really great… blah!” And then I tried them and they were great!!!!!!!! I actually thought it would be boring, but it was delicious.
This is one of my favorite dishes to make during the summer months if you want light, simple meal!
Ingredients for turkey salad wraps
A quick and easy recipe is exactly what I need in summer! It always feels like we’re running to soccer practice or rushing in from the pool, and simple and delicious is my summer jam! Here are the ingredients you will need…
For the filling
- ground turkey: You can make it as lean as you like. Note, however, that the leaner the turkey, the drier the filling.
- celery: beautifully finely diced
- carrots: You can shred your own carrots or buy them already shredded.
- Red pepper: You could also use yellow or orange, but I wouldn’t use green.
- Onion: chopped small
- Garlic: imparts flavor
- slivers of almonds: gives the wraps the most amazing crunch
For the sauce
- peanut butter: You want a creamy sauce that gives the sauce that great peanut flavor.
- Brown sugar: gives the sauce more flavor and richness
- Sugar: adds more sweetness to the sauce
- Hoisin sauce: a thick, dark sauce that is both sweet and salty
- oyster sauce: a thick, dark sauce made from oyster extract that, despite the name, doesn’t taste fishy and adds an earthy note
- rice vinegar: is made from fermented rice and imparts acidity
- soy sauce: Gives the sauce a great umami flavor
- Red pepper flakes: Adds heat to the sauce
- lettuce leaves: You want whole large sheets with no tears in them

How to Make Lettuce Wraps
You only need about 30 minutes for this tasty recipe. It’s as simple as searing the turkey, sautéing the veggies, and tossing together the peanut sauce. Here are the basic steps…
- Roast the turkey until almost fully cooked. Put in a bowl.
- Mix all the ingredients for the sauce in a separate bowl.
- Add all the vegetables to the pan and sauté until tender. Then put the meat back in.
- Add the sauce and simmer for a few minutes.
- Add the meat mixture to the lettuce leaves and sprinkle with slivered almonds and chopped spring onions.

Which salad make the best lettuce wraps?
Iceberg, boston, green leaf, and butter lettuce seem to be the most commonly used, with iceberg and butter lettuce being favorites.
Romaine lettuce can also be used, but wrapping is more difficult.

I found a few tricks to keep lettuce wraps from falling apart. First, you want to find large lettuce leaves that don’t have tears or holes in them. Second, you can double the amount of lettuce leaves.
PRO TIP: Eat your lettuce wrap over another piece of lettuce to catch any filling that may fall out. Then your next wrap can already begin!

Variations for lettuce wraps
Adding other vegetables to the turkey stuffing is a great way to lengthen the stuffing if you want a few more wraps. A few great options would be peas, chopped mushrooms, shredded cabbage, or chopped broccoli.
If you don’t have ground turkey, you can use ground chicken, beef, or even ground pork. Topping the wraps with chopped peanuts is also a great way to add even more peanut flavor to the dish.

Save on computer Fill the filling separately from the salad in case you have any leftovers. The filling will keep in the fridge for 4-5 days. The filling too freezes very good and keeps in the freezer for up to 3 months. warm up Heat the filling on the stovetop until warmed through and serve with fresh lettuce leaves.
