You might be surprised to know that this teriyaki tofu stir fry is quick and easy! It’s a reason for our weeknight meal!

We love quick and easy weeknight meals, like black bean burritos or vegan minestrone. This easy tofu stir fry is another favorite because it’s ready in minutes and so delicious!

Here are the ingredients you will need for this recipe:

  • tofu — I like to use a 15-ounce tub of extra-firm tofu. You can also use firm tofu.
  • Cornstarch — I like to coat the tofu in cornstarch to create a crispy crust.
  • vegetable oil – Let’s fry the tofu in vegetable oil. You can use generic vegetable oil, olive oil, or even sesame oil.
  • vegetable — I like to add a mix of veggies like colorful bell peppers, green beans, sugar snap peas, carrots, mushrooms, baby corn (I buy these canned), broccoli, and water chestnuts (canned). You can substitute frozen Asian vegetables.
  • Teriyaki sauce — We need vegan honey (or maple syrup), tamari (or soy sauce if you’re not worried about gluten), ginger, minced garlic, vegetable broth, and cornstarch.
  • bhajana – Serve this tofu over noodles, zoodles or cooked rice. You get bonus points in my book for serving over cooked brown rice. Add some sesame seeds and/or chopped green onions for flavor, texture and drama.

Press the tofu

We prefer firm tofu for recipes like stir-fries. Firm tofu provides the best texture, and it’s worth trying to press it before cooking.

When you buy tofu, it comes in a container with water. That water keeps the tofu fresh for a long time, but it also makes the tofu quite soft. Here’s how to press the tofu to remove the packing liquid:

  • Wrap the tofu block with a kitchen towel (or paper towel) and place on a plate. Top with another plate and place something heavy on top, such as a heavy pan. Keep it aside for 30 minutes to an hour.
  • Use a tofu press. This is my favorite way to press tofu these days. It makes a firm tofu without much effort. Check out the recipe card below for my favorite tofu press.

  • Use frozen Asian vegetables —I love the big bag of frozen stir-fried veggies at Costco!
  • Buy pressed tofu — Speaking of Costco, if you’re lucky enough to sell tofu, it’s usually pre-pressed, meaning it comes out of the package nice and firm. But many health food stores also sell pressed tofu.
  • Store bought sauce — I think homemade is always better, but when we’re in a rush, I like to use Sun-J Light Teriyaki Sauce. It has a great flavor, is low in sodium, and is gluten-free.

Prevent your screen from going dark

For the stir fry:

  • Add extra oil to the wok. Then add the vegetables, stir and fry for a few minutes until the vegetables are fork tender.

  • When the vegetables are ready, return the tofu to the wok.

For the teriyaki sauce:

  • Whisk together the sauce ingredients in a small bowl.

  • Pour the sauce over the ingredients in the skillet and cook until the sauce thickens, about 3 to 5 minutes.

  • To serve, distribute cooked rice in bowls and top with tofu stir-fry. Top each serving with sesame seeds.
