Unless you live under a rock, you’ve probably seen Ted Lasso. And if you’ve seen Ted Lasso, you’ve probably seen Ted gifting Rebecca homemade cookies in the iconic pink box. AND if you’re like me, you’ve been wanting to bite into one of those buttery shortbread bars ever since it graced your TV screen. So, without further ado, let me introduce the Ted Lasso Cookie Recipe.

Or at least the way I imagine it.

Where does Ted Lasso get the cookies he gives to Rebecca?

If you’ve watched the series, you know that Ted brings Rebecca a cute pink box of cookies every morning and she’s dying to find out which bakery he’s buying them from. Of course, *spoiler alert*, we later learn that Ted bakes them himself (which is pretty cute). And while it may seem like it takes him a long time to make cookies for her every day, these bars are actually quite easy to make.

These shortbread cookies take minutes to make and have a shelf life of weeks, so you can make a large batch and enjoy weeks of sweet treats on a whim. I’m sure Ted is making a large batch of old pieces and then taking them to Rebecca for the following weeks. At least I would because I’m lazy.

What ingredients do you need for Rebecca’s favorite cookies?

The best part about homemade cookies is that they’re super easy to make with basic ingredients, so you can make them however you like.

  • Butter: The basis of any good shortbread cookie is good shortbread, so be sure to treat yourself. We love Vermont Creamery, but any high-quality butter will do!
  • Sugar: These cookies aren’t particularly sweet, but they do need some sugar to get just the right amount of caramelization and chewyness. We use granulated sugar for the cookies and then add a golden or raw sugar on top to give them that classic sugary finish that Ted’s cookies have!
  • Flour: For the perfect crumb in your shortcrust bars, use all-purpose flour. I’ve also had success making these with a gluten-free 1:1 baking flour!
  • vanilla extract + Almond Extract: Due to the combination of vanilla and a little almond, these biscuits taste like they came from the bakery!
  • Salt: You only need a little, but salt is so important to deepen the flavor. It reduces the sweetness just enough to make these shortbread bars really addicting.

How to Store Ted Lasso Cookies so They’ll Stay Soft for Days (Not That They’ll Last That Long)

Shortbread is one of those magical cookies that keeps incredibly well. They are quite hardy and will stay tender and soft for up to three weeks as long as they are kept in a sealed container. So they are perfect for sharing or sending to friends. But I won’t tell anyone unless you share a single one of them with someone else. Our little secret 🙂

Ingredients

  • 2 cups all purpose flour
  • 2/3 Cup granulated sugar
  • 1/2 teaspoon Salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 Cup unsalted butter, cold and cut into cubes
  • coarse sugar, for sprinkling (optional)

instructions

  1. Preheat the oven to 350F and line an 8″ x 8″ skillet with parchment on all sides. Put aside.
  2. In a food processor, combine flour, sugar, salt, vanilla, almonds and butter. Pulse until the mixture is just combined and the mixture begins to form a dough around the food processor blades.
  3. Press the dough into the prepared pan and spread it out into an even layer with your hands.
  4. Sprinkle the top of the bars generously with coarse sugar.
  5. Bake at 350°F for 35 to 40 minutes or until lightly golden brown. Remove the bars from the oven and let them cool completely before slicing into your desired size! Enjoy!
