Tater Tot Breakfast Casserole is a dish that’s easy to make and packed with flavor. My family loves potatoes, so of course we’re big fans of the Tater Tot. They are a very versatile ingredient. Ideal for breakfast, brunch, lunch or dinner.
INGREDIENTS FOR THE TATER TOT BREAKFAST CASSEROLE:
- Tater Tots
- Smoked Sausage
- Campbell’s Cheese Soup
- milk
- Chopped Onion
- Chopped green pepper
- Chopped Garlic
- eggs
- Black pepper
- Sharp cheddar cheese
- Colby Jack Cheese
HOW TO SERVE TATER TOT BREAKFAST CASSEROLE:
The great thing about a casserole is that you don’t have to make a lot of side dishes. As this is a savory dish, you can easily serve it with a fruit side dish or this fruit salad. It also pairs beautifully with those whipped cream cookies or old-fashioned sweet bread. These Orange Blueberry Muffins would taste amazing too!

- If you have leftovers, this dish will keep covered in the fridge for 3-4 days.
- I’ve never frozen this dish, but I’m sure it freezes well. Simply bake the dish and then freeze it.

Tater Tot Breakfast Casserole
This Tater Tot Breakfast Casserole is so easy to make and packed with flavor. It is delicious!
Servings: 8th portions
- 1 32-ounce bag of Tater Tots (we use Oreida)
- 1 Pound smoked sausage cut into quarters
- 1 10.5 ounce can of Campbell’s Cheese Soup
- 1 Cup from milk
- 1/2 Cup chopped onion
- 1/2 Cup chopped green pepper
- 1 tablespoon chopped garlic
- 8th eggs
- 1/4 teaspoon of black pepper
- 1 Cup sharp cheddar cheese shredded
- 1 Cup Colby Jack Cheese shredded

Preheat oven to 350 degrees. Spray a 9×13 casserole dish and set aside. In a skillet over medium-high heat, sauté onions, green peppers, smoked sausage, and minced garlic. Cook until onions and green peppers are soft. Remove from stove. In a large bowl combine the tater tots, sausage mix and both cheeses, mix and pour into the baking pan.

In a separate bowl, whisk together eggs, cheddar soup, milk, and black pepper. Once mixed, pour over the Tater Tot mixture.

Bake at 350°C uncovered for 65-75 minutes until eggs are fully cooked.
