This quick dressing pairs the Freshness from lime juice with the Richness in tahini. These flavors are well balanced by a sweet and sour combination of apple cider vinegar and maple syrup – so good!
Tahini is a smooth butter made from husked sesame seeds that are first roasted and then ground into a silky paste. It’s a staple ingredient in Middle Eastern and Mediterranean cuisines, and is used in traditional recipes like hummus, baba ganoush, and halva. It’s also great on toast, drizzled onto falafel soup, added to energy bites — and straight from the jar, too.
Aside from being delicious, sesame paste is also rich in beneficial nutrients such as: Proteins, fiber, calcium and iron. Plus, like most of its fats, it’s a heart-friendly ingredient healthy unsaturated fats. In this recipe, we used tahini instead of oil as the base for the dressing, reducing the total fat content by 25%.
