Donuts hold a dear place in my heart. They are versatile, require minimal effort and are a great way to eat lots of vegetables. And these sweet potato fritters are no exception! In fact, the sweet potato seriously takes them to a whole new level. I’ve been making them for breakfast and I don’t plan to stop anytime soon.

These easy donuts include simple and accessible ingredients and a very simple preparation method. Just mix the ingredients, fry and serve! The result is a crunchy deliciousness ideal for a snack or a main course. Serve them with any sauce/saucy of your choice and you’re good to go.

  • sweet potato This is the star of the show here, bringing crunch and a subtle hint of sweetness.
  • onion You can use white or red onion.
  • sweet corn I love adding sweet corn to the fritters for extra crunch and texture.
  • flour I usually use plain white flour. You can also use gluten free.
  • The condiments: salt, cumin and red pepper.
  • A flax egg. This is done by stirring in the ground flax seeds and water so that the fritters stick together.
  • Tomato paste for itching
  • I am willow This adds a touch of umami that really elevates the overall flavor profile of the donuts.

How to make vegan sweet potato fritters

It’s incredibly simple! First, peel and grate the sweet potato with the large side of the grater. Next, prepare the flax egg by stirring together the ground flax seeds and water and set aside for 10 minutes until a gel-like consistency forms.

Next, add the sweet potato, onion, corn, flour, salt, cumin, red pepper, flax egg, tomato paste and soy sauce to a bowl. Stir well.

Heat some olive oil in a large frying pan or skillet over medium-high heat. Shape the fritters with your hands, then place them in the pan/pan with a spatula. Flatten them gently and let them cook for 3-4 minutes. Then flip and cook for another 3-4 minutes, until crisp and cooked through.

Remove from the pan and serve the fritters with any sauce or dip of your choice.

Can these donuts be baked?

For sure! Simply line a baking tray with baking paper. Brush the fritters with olive oil on both sides, place on the baking sheet and bake at 350 degrees F/180 degrees C for 20-25 minutes, until crispy and cooked through.

How to store and freeze donuts

You can store the fritters in the fridge in an airtight container for up to 3 days, although after that time they will lose some of their crunch.

Donuts with vegan yogurt

You can also freeze them in a ziplock bag, placing a piece of parchment paper between individual donuts, for up to 2 months. You can reheat them directly from frozen in a pan or by placing them in the oven at 350 degrees F/180 degrees C for 25 minutes.

How to serve sweet potato fritters

You can serve these fritters with any sauce or dip you like. Something like dairy-free mayo or vegan horseradish dip goes really well with its flavor. You can also serve them with scrambled tofu for a phenomenal breakfast or brunch.
