Ingredients for Fudgy Brownie Cookies

These easy brownie cookies require the same ingredients you need for homemade brownies, with a few exceptions. You need a little more dry and a little less wet ingredients, but you get the exact same fiddly brownie texture.

  • cocoa powder: Of course, all chocolate desserts need cocoa powder. We love Rodelle’s cocoa powder, but any high-quality cocoa powder processed in the Netherlands will work just fine!
  • Chocolate: In addition to the cocoa powder, you will need baking chocolate squares. Make sure you use a bittersweet or dark chocolate as milk chocolate is too sweet for these brownies.
  • Flour: All-purpose flour keeps these chocolate chip cookies soft! We’ve also had success with Bob’s Redmill 1:1 Gluten Free Flour if you want to make them gluten free.
  • Salt: Salt is a key ingredient in sweet treats. It will take your desserts from good to great. You need salt in the brownie batter, but we also love tossing these crunchy chocolate chip cookies with a sprinkling of sea salt for a ~gourmet~ cookie.
  • Butter: You need melted butter to keep these brownie cookies super soft and decadent.
  • Sugar: We used a combination of brown sugar and granulated sugar to give you a chewy and perfectly sweet cookie.
  • espresso powder: We always use espresso powder in our chocolate treats to enhance the chocolate flavor. You won’t taste the coffee at all – just deep, rich chocolate!
  • eggs: Make sure your eggs are at room temperature so they don’t split the warm chocolate.

To ensure every bite of these brownie cookies is as moist, chocolatey, and perfect as it should be, follow the recipe closely and heed our advice. We’ve made these musty chocolate chip cookies more than a few times. You can trust us 🙂

  • Work fast: To ensure your cookies get that glossy, crunchy, signature brownie finish, it’s best to pop the brownie cookies in the oven right after the batter is prepared. In my opinion this is preferable as there is NO CHILL TIME. In other words, you can have cookies in your belly from start to finish in 20 minutes.
  • Use quality chocolate: You need a combination of cocoa powder and real chocolate to make these moist chocolate chip cookies. As with all chocolate desserts, we recommend using high-quality cocoa. For cocoa powder, we love Rodelle. For chocolate we like to bake with Ghiradelli, Guittard, Lindt or any other high quality brand.
  • Don’t forget espresso powder: Espresso powder enhances and deepens the chocolate flavor. So don’t worry about your cookies tasting like coffee. The only thing you will taste is delicious chocolate.
  • DO NOT overcook them: There are few things worse than baked cookies. Be sure to remove the brownies as soon as they start crackling, if they’re still raw and gooey in the middle. The cookies will continue to bake once they’ve cooled, leaving you with perfectly gooey centers.

Just like brownies, these chocolate chip cookies stay moist, crunchy, and tender for days. It’s best to store them in an airtight container or plastic bag to preserve their flavor and texture for as long as possible. The other great news? These Chocolate Brownie Cookies freeze super well. ingredients

  • 8th ounces Dark chocolate, chopped
  • 6 tablespoons unsalted butter
  • 3/4 Cup Brown sugar
  • 1/4 Cup White sugar
  • 2 Eggs, room temperature
  • 3/4 Cup all purpose flour
  • 1/4 Cup cocoa powder
  • 1/4 teaspoon Salt
  • 2 teaspoons espresso powder

instructions

  1. Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
  2. In a microwave-safe bowl, mix together the butter and finely chopped chocolate. Microwave in 15 second increments, stirring well in between, until chocolate is completely smooth and melted. Do not overheat the chocolate as this can cause burns. Put aside.
  3. In a stand mixer fitted with the whisk attachment, combine the eggs and sugar. Beat on high speed until light and pale yellow in color, about 3 minutes.
  4. With the mixer on low, slowly add the chocolate and butter mixture and mix until completely homogeneous. Stop the mixer.
  5. Add flour, cocoa powder, salt and espresso powder. Blend until combined. The dough will be soft.
  6. Don’t let the batter rest to get the pronounced glossy peaks! Once the batter is mixed, use a standard sized cookie scoop to lift the cookies, about 2 inches apart, onto the prepared cookie sheets. Bake for 10 minutes or until the cookies are crackling and set around the edges but still sticky in the middle. Let cool before eating!
