Shrimp is something I often forget. But in summer it’s the BEST! It doesn’t take long to cook so you don’t have to leave your stove on for very long, and it’s so refreshing compared to some of the heavier protein options out there. I’ve recently started getting shrimp home delivery in my monthly meat order and I’m so glad I did. Now I make shrimp salads weekly because it’s so darn easy! Vegetables + protein + a delicious dressing = a very happy pregnant person! And best of all, this dressing goes a long way, so you can keep it in your fridge for a week to use with other salads or just as a topping!
Speaking of the lucky pregnant person… TODAY is my due date. 22.7.22. But as you can see as I write this post, I’m still here, pregnant, unwell, and ready to finish. I’ve been pregnant for 12 years and now I’m at the finish line… but the finish line keeps getting farther away. This pregnancy was a HUGE learning experience. Talk about learning to surrender and let go of expectations. I should be a pro at giving up at this point, but if you’re given a due date, expect to give birth on or before that date. Not AFTER, ha! While most first-time moms are an average of 8 days past their due date, it’s hard to envision it for yourself until you’re around. I could burst today or it could be another 2 weeks. Who knows, damn it… but either way, I’m just going a little crazy.
But at the same time, I embrace every last moment as a totally childless adult. For most of my life I never thought I would have children. Which I talked about in detail in this video. Being child free is great. You can go anywhere you want anytime. And I’ve lived this beautiful life for a long time. But now it’s time for a new adventure with a new buddy. So instead of being constantly frustrated that she hasn’t shown up yet, I do ALL the things I love most – working in coffee shops, going to my favorite restaurants, getting prenatal massages, cooking postpartum meals, planning the future of PaleOMG, sleeping in (that’s a lie, I haven’t slept in my whole life, but I tried), lying on the couch watching The Great British Baking Show, browsing the grocery stores for new products, and whatever else my little heart loves still coveted. It was absolutely gorgeous. I can’t wait for her to come here, but I’m truly grateful for every last moment in this chapter of my life. Can’t wait to see what the next one has in store!
Summer shrimp salad

- Cooking time: 15 minutes
- Total time: 35 minutes
- Yield: 3–4 portions 1x
For the cilantro lime ranch
- 1 cup coriander
- 1 Jalapeño, seeded, roughly chopped
- 2 tablespoons fresh dill
- 2 tablespoons fresh chives
- 1/2 cup Avocado oil mayonnaise
- 3/4 cup milk of your choice
- juice from 1 lime
- 1/2 teaspoon garlic powder
- pinch of salt
For the salad
- 1/2 pound bacon, chopped
- 1 teaspoon chilli powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon oregano
- 1/4 teaspoon Salt
- 3/4 Pounds of deveined, peeled raw shrimp
- 1/2 cup frozen corn
- 1 Head of butter lettuce, roughly torn
- 1 red peppers, diced
- 1 Avocado, sliced
- 2 ounces goat cheese
- Place all the ingredients for the cilantro-lime ranch in a blender and blend until smooth. Set aside in the fridge.
- Place the bacon in a large nonstick skillet over medium-high heat. Fry the bacon until crisp and then set aside on kitchen paper. Discard excess bacon fat, leaving 1-2 tablespoons to cook shrimp in.
- Place the chili powder, garlic powder, paprika powder, cumin, oregano, and salt in a shallow bowl and mix together. Add the shrimp and toss to coat the shrimp in all of the spices.
- Add shrimp and cook until tails curl, 3-4 minutes per side. Set aside shrimp with bacon, then add frozen corn to skillet and sauté corn until lightly browned, about 5 minutes.
- Lastly, prepare your salad by tossing the lettuce, peppers, avocado, and goat cheese into a large bowl. Once the corn is done, add the bacon, shrimp, and corn. Add desired amount of dressing and fold in. Then all you have to do is eat it, my friend!
