This summer fruit salad is bursting with fresh fruits and berries! Sliced juicy peaches are blended with rainier cherries, strawberries, blueberries and raspberries in fresh citrus juice and honey. For 6 to 8 people.
Fruit salad is the ultimate summer dish.
There are so many different combinations and the combination is usually very simple! This Summer Fruit Salad is a delicious summer twist on the traditional fruit salad. It mixes sliced, juicy peaches with fresh berries and cherries. A dash of honey, fresh herbs and citrus juice round it all off.
This summery combination is unbeatable!
To make this Summer Fruit Salad you will need:
- peaches – Peaches taste best when they are firm and give slightly when pressed gently.
- cherries – I like rainier cherries, but dark sweet cherries would work too.
- strawberries – Cut larger berries in thirds and smaller berries in half.
- raspberries – Use firm raspberries so they don’t fall apart when you turn them in the salad.
- blueberries – Use fresh, firm, and ripe blueberries.
- mint and basil (fresh) – It gives the salad a fresh herbal taste.
- Honey – Adds a touch of flavor and sweetness that complements the fruit.
- lemon and lime juice – Imparts flavor and acidity.
In a medium mixing bowl, add 2 sliced peaches, 8 ounces pitted rain cherries, 8 ounces sliced or halved strawberries, and 4 ounces each of fresh blueberries and raspberries.
Next, add 1 tablespoon each of fresh basil and mint, and a dash of honey. I recommend shredding the herbs by hand so they retain their freshness and the leaves don’t turn brown.
Add the juice of half a lime and lemon.
Mix gently and serve or refrigerate an hour before serving.
Transfer to a serving plate or bowl and add a few mint leaves and basil leaves to garnish.
